Main Ingredients

  • 1 1/2 pounds ground bison
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 cups coleslaw mix
  • 1/2 cup chopped celery
  • 2 scallions (chopped)
  • 1/2 cup prepared ranch dressing

Optional

  • Kaiser roll or hamburger buns

Cooking Instructions

Step 1

Preheat grill or grill pan to medium high heat (425-475º). Make rub by mixing in a small bowl chili powder, paprika, garlic powder, cayenne pepper, salt and pepper, reserving 1 teaspoon of rub for coleslaw.

Step 2

Divide bison into 4 patties and season with remaining rub. Place on grill or grill pan for 6 minutes. Flip and cook additional 5-8 minutes or until internal temperature of 135º is reached for medium rare burger. Let rest 5-8 minutes.
