Preheat a skillet over medium-high heat.
Once the skillet is hot, add oil and swirl to coat the bottom. Add burger patties and cook until golden brown on one side, 4-5 minutes.
Meanwhile, wash and dry the fresh produce. (Skip the mixed greens if they came pre-washed.)
Flip the burger patties, top with cheese, and continue to cook until cheese is melted and patties are golden brown and cooked through, 4-5 minutes more (or cook patties according to package instructions). Remove to a plate.
While the burgers are cooking, halve tomatoes. Place in a medium bowl.
Trim and halve cucumber lengthwise, then cut crosswise into thin half-moons. Add to the bowl with the tomatoes.
Trim, seed, and small dice bell pepper. Add to the bowl, along with the mixed greens, and toss to combine the salad.
When the burgers are done, slice into strips.
To serve, divide salad between plates or bowls. Crumble tortilla chips over the salad, then top with veggie burger slices and dressing. Enjoy!
