Cut the goat cheese log into 8 equal-sized pieces. With clean hands, roll each piece into a ball. Place the balls in a small container and freeze for at least 20 minutes.
Start preheating your air-fryer to 400-degrees. Place the flour in a small bowl. Beat the egg well in a small bowl. Place the panko crumbs in a small bowl.
Roll each ball in the flour, then submerge it in egg, making sure everything is well covered. Then roll the ball in the panko crumbs, covering all sides completely. Place it in the air-fryer basket (set over a larger pan to catch any extra spray) and coat the top well with the spray. Gently roll the ball to the other side and coat the top with spray. Repeat with remaining balls.
Air-fry until golden brown (about 6 minutes but watch carefully).
Set on a serving plate and add a sprinkle of the herbs and a drizzle of honey.
