Directions Grilling Tips: Grilling: For general grilling. Open grill vents for higher temperatures. Reduce vent openings to lower the temperature. Cooking with the lid off creates high heat. Cook with the lid on for slower cooking methods. Searing: Searing is a process that creates a flavorful caramelized outer crust. Create cooking zones by adding briquets to one side of the grill. Cook each side directly over the briquets, then move to indirect heat to finish. Ceramic Grills & Smokers: Ceramic materials helps focus heat for high-temperature grilling and searing, and insulates the grill to retain heat for low-effort temperature control. Fill up the bowl with charcoal and light briquets with fire-starter cubes or an electric starter. Using low-ash formula briquets helps maintain airflow from the bottom vent of the grill. Directions: (1) Stack briquets in a pyramid. Add lighter fluid following lighter fluid directions. (2) Light charcoal. Leave grill uncovered. Flames will die out while the briquets continue to burn and start to ash over. (3A) Spread briquets in a single layer when covered in ash (in about 10 minutes). Begin grilling. (3B) Move briquets to one side of the grill when covered in ash (about 10 minutes) to create 2 cooking zones for searing. Begin grilling. Store brisquet in a cool, dry place.
