Directions Tuscan Chicken: Prep: 15 min. Cook: 60-75 min. Serves: 4. Ingredients: 1 chicken (4-5 pounds); 2-3 tablespoons olive oil; 1 lemon, cut into quarters; 1 packet Victoria Taylor's Tuscan Chicken Seasoning; salt. 1. Preheat the oven to 425 degrees F. 2. Rinse the chicken inside and out and pat dry. Loosen the skin from the breast and rub olive oil under the skin and all over the chicken. Put the lemon pieces inside the cavity. 3. Place the chicken in a roasting pan breast side up. Rub the Tuscan Chicken Seasoning all over the chicken, inside and out, including under the skin. Salt as desired inside and out. 4. Place a loose sheet of foil over the chicken and cook for 30 minutes. Remove the foil and cook for an additional 30-45 minutes, or until the chicken reaches an internal temperature of 160 degrees. 5. Let the chicken rest for 10 minutes before carving to serve.
