Directions For larger cuts of pork, such as roasts, cook to 150 degrees F; remove from heat and allow to set for 10 minutes. the temperature of the roast will continue to rise to 160 degrees F. Roast in an uncovered, shallow pan at 350 degrees F unless otherwise specified. Shoulder Roast (Butt): 3-6 lbs: final internal temperature of 160 degrees F; cook 30 min per lb until tender.
