Our friend Carmel has been serving us her paella for special occasion for years. We've always enjoyed it, so we decided to add it to your menu. As a vegetarian paella, it's a twist on the traditional. We use creamy Arborio rice, tender organic carrots, peas, red bell peppers, green beans and tomatoes. Our house-made tofu is marinated and roasted to give it smoky, sweet flavor. Classic paella spices like saffron, wood smoked paprika, garlic and black pepper are added to create the authentic flavor of this Spanish dish. After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only

Directions Microwave or regular oven. Directions: Ovens may vary. Microwave Oven: Make a 1-inch slit in overwrap. Cook on high for 3 minutes. Remove overwrap. Stir. Cook on high for 1 more minute. let sit 1 minute. Serve. Conventional Oven: Preheat oven to 400 degrees F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 50-55 minutes. Let sit 1 minute. Serve. Toaster Oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
