Stir Fry: YOU WILL NEED 2 tbsp. oil 1 large onion, finely chopped (about 11/2 cups) 11/2 lbs. boneless skinless chicken thighs, cut in 1-inch chunks 2 medium tomatoes, coarsely chopped (about 2 cups) 1 pkg. Chicken Curry Seasoning Mix 1/3 cup light or heavy cream DIRECTIONS: 1. HEAT oil in large skillet on medium heat. Add onion; cook and stir 3 minutes or until translucent. 2. STIR in chicken, tomato and Seasoning Mix; cook 15 minutes or until chicken is cooked through, stirring occasionally. 3. STIR in cream. Reduced heat to low; simmer 5 minutes or until slightly thickened, stirring occasionally Makes 5 servings. PREP TIME: 10 minutes. COOK TIME: 25 minutes
