Directions Tropical pulled pork sandwich serves 4 - you will need: 4 arnold potato sandwich buns, 2 lb. pork shoulder butt, fat trimmed, 2 garlic cloves, minced, 1 1/2 cups unsweetened crushed pineapple, undrained, 2 tsp. lemon-pepper seasoning, 1/2 cup orange juice, 1 cup mango salsa, optional topping: diced green pepper. instructions - 1. rub roast with combined garlic and lemon pepper. transfer to a slow cooker and top with pineapple and orange juice. 2. cook, covered, on low 8-10 hours or high 4-5 hours until meat is tender. remove roast and cool slightly. 3. remove crushed pineapple from slow cooker using slotted spoon, and discard remaining cooking liquid. 4. shred pork, then return pork and pineapple to slow cooker. stir in salsa and heat through. 5. serve about 1/2 cup pork mixture on each roll, topped with green pepper, if desired.
