Of Sarnese - Nocerino area. The story of the San Marzano tomato begins in the 18th century on the slopes of Mount Vesuvius. The rich volcanic soil coupled with the favorable Mediterranean climate is ideal for growing this vertically cultivated and aromatic plant The crop is intensely red with thick, but tender, flesh and is delicately hand-harvested in the hot, dry months of August and September, at the peak of ripeness. The oblong plum-shaped tomatoes are uniquely described as bittersweet, as decadent as fine chocolate, and they are low in sugar and acid, making them most ideal for sauces because they marry so well with other ingredients. True San Marzano tomatoes are still grown in the Sarnese-Nocerino valleys near Salerno, designated Pomodoro San Marzano dell' Agro-Nocerino-Sarnese, and protected under the denomination of origin regulation.
