Spicy Garlic Clams
Garlic & Wine Steamed Clams make an amazing appetizer or a delicious dinner! For apps, plan on serving a half pound of clams per person and for the main dish, plan for a pound per person. Garnish with fresh chives and lemon wedges for a beautiful presentation.
- 3 lbs Venus Clams (cleaned and rinsed)
- 3 Tbs Signature Select™ Extra Virgin Olive Oil
- 4 Garlic Cloves (Minced)
- 1 cup White Wine
- 2 cup Water
- 1/2 tsp Red Pepper Flakes
- 1/2 tsp Celery Seed
- 2 Tbs Fresh Thyme Leaves
- 2 Tbs Fresh Chives (minced)
- 4 Tbs Essential Everyday Sweet Cream Butter (melted for dipping)
- Baguette (sliced for dipping)
Thoroughly wash clams in cold water.
Heat olive oil in a 4-quart sauce pan (with a lid) over medium heat.
Add garlic and sauté for 60 to 90 seconds until translucent.
Add wine and cook for 3-4 minutes.
Add the water, red pepper flakes, celery seed and thyme leaves. Stir to combine.
Add the clams and cover the pan. Cook for 10 minutes or until clams open. Discard any clams that do not open. Remove clams to serving bowl and pour the liquid from the pan over the clams.
Garnish with minced fresh chives and lemon wedges.
Serve with melted butter, placed in small dishes for dipping and sliced baguette.
