Snickerdoodle Ice Cream Cookie Sandwiches
Whip up these chewy, creamy, and delicious snickerdoodle cookie ice cream sandwiches, made with our exclusive Open Nature® cashew milk non-dairy frozen dessert, for the perfect summer sweet treat!

- 4 snickerdoodle cookies
- 1 cup Open Nature® Vanilla Bean Cashew Milk non-dairy frozen dessert
- 2 tablespoons powdered sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cocoa powder
Divide the cashew milk non-dairy frozen dessert into 1/2-cup portions and place onto cookie.
Lightly press the cashew milk non-dairy frozen dessert to flatten.
Top with second cookie, press to flatten again.
Wrap in wax paper and chill to re-freeze cashew milk non-dairy frozen dessert.
Combine powdered sugar, cinnamon and cocoa powder to create powdered sugar mixture for topping.
To serve, remove wax paper and top with powdered sugar mixture.
