Grilled Chicken with Lemon
Celebrate spring and summer with this perfect grilled chicken recipe! Poaching the chicken is the secret to a juicy, delicious and flavorful main entrée. This chicken recipe is sure to be a staple all season long!

- 2 lbs Open Nature® boneless, skinless chicken breasts
- 2 pinches kosher salt
- 1 tablespoon black peppercorns
- 6 lemon wedges
- 1 sprig rosemary
- 6 cloves garlic
- 1 tablespoon red crushed chili flake
- 1 cup olive oil
Season chicken breast with salt and pepper, then place into shallow baking dish or sauté pan, add lemon, rosemary, garlic and crushed chili flake.
If poaching in oven, preheat oven to 350°, then place chicken in oven and cook for 20 minutes.
If poaching on stove top, heat slowly over medium-low heat for 20 minutes.
Remove chicken from oil, brush away excess oil, mark on grill set to high heat or until internal temperature reaches 165°.
