Bleu Cheese Stuffed Hatch Chile Burgers

1 pound Lean Ground Beef
1 cup Crumbled Bleu Cheese to taste
Salt and Freshly Ground Pepper
4 slices Cheddar Cheese
2 each Melissa’s New Mexico Hatch Chiles — roasted, peeled, seeded, halved
4 each Hamburger Buns
In a bowl, combine the beef, bleu cheese and salt and pepper until well mixed.
Form the mixture into 4 patties.
Place the patties onto a wire rack and place it onto a sheet pan.
Place 1 piece of cheddar cheese onto each burger and then top each with one half of a Hatch chile.
Place under the broiler and cook to your desired doneness.
Add your favorite condiments and enjoy.
Makes 4 burgers.
Note: These burgers could also be done on the grill.
Hatch Chile Grilled Quesadilla
4 large Flour Tortillas
3 cups Shredded Cheddar Jack Cheese
3 New Mexico Hatch Chiles, roasted, peeled and seeded, diced
Prepare a hot BBQ grill.
Place 1 tortilla on a flat surface. Sprinkle with 1/2 of the cheese and chile. Cover with another tortilla and set aside. Repeat for the remaining tortillas.
Place the filled tortillas on the grill and cook until you get nice grill marks and the cheese begins to melt. Flip them over and repeat for the other side.
Makes 2 large quesadillas

Hatch Chile Deviled Eggs
12 Fresh Eggs
½ cup Real Mayonnaise
1 teaspoon Dry Mustard
2 Tablespoons Sweet Pickle Relish
Salt and Freshly Ground Pepper, to taste
2 teaspoons New Mexico Hatch Chile Powder (chiles dried and ground)
Place the eggs in a large pot and add enough cold water to cover the eggs by 1-inch. Over high flame, bring the eggs and water to a boil. Remove the pot from the heat, cover and let sit for exactly 17 minutes.
Next, transfer the eggs to a bowl of ice water. Bring the water back to a boil. Place 6 eggs back into the boiling water and cook for 10 seconds, then return them to the ice water.
Repeat for the other 6 eggs.
When cool carefully peeled the eggs and rinse them.
Split each egg in half, lengthwise, and remove the yolk. Place the yolks in a mixing bowl. Using a fork, mash the yolks. Add the mayonnaise and the rest of the ingredients, except for the Hatch chile powder to the egg yolks. Mix well until creamy.
Pipe the yolk mixture into the egg white halves, sprinkle with the Hatch chile powder and place in the refrigerator until time of service.
Makes 24 deviled eggs
