Powerful Breakfast Parfait

Protein-Packed Chocolate Fruit Dip

Simply combine 2 containers of Plain or Vanilla Muuna cottage cheese, pudding mix, and cocoa powder in the food processor. Process until smooth, poor into a bowl, and refrigerate. Serve as an afterschool snack with fresh fruit like strawberries, apples, and bananas.

Filling Fiesta Quesadillas
Up the creaminess AND the protein in your usual quesadillas by mixing Lowfat plain Muuna cottage cheese with shredded cheddar. Serve with salsa for a tasty lunch or dinner the whole family will enjoy!

Ingredients
• 2 Containers of 5.3oz. Vanilla Muuna cottage cheese
• 1 Tbsp. Instant chocolate pudding mix
• 1 tsp. Cocoa powder
• ¼ tsp. Instant coffee powder (or ⅛ tsp. coffee extract)
• 1 Tbsp. Dark chocolate shavings or mini chocolate chips
Instructions
1. Empty cottage cheese containers into a food processor and process for 1.5 minutes.
2. Add pudding mix, cocoa powder, and coffee extract.
3. Process for another minute, stopping to scrape the sides of the bowl at least twice, until smooth.
4. Pour into a bowl, cover, and refrigerate for one hour.
5. Top with chocolate shavings and serve with fresh fruit.
