With the holidays upon us, we can still have delicious meals with Meatless Monday. Do you have a holiday get-together coming up or a potluck at the office? Are you ready to wow your friends and family with a delicious meatless appetizer? Here are some great ways to substitute that meat in your favorite appetizer and still have a memorable dish for everyone to enjoy.


Fun fact…Jackfruit is a fruit and it does have a mild sweet flavor. When it is cooked with other ingredients, it takes on that flavor. As the texture is like chicken, it is often used as a replacement in BBQ pulled sandwiches. Try different combinations and try to use jackfruit in a taco dip, its a fun way to jazz up a classic dish.


If you are in a mood of an umami flavor, mushrooms are the way to go. Little mushrooms pack a powerful savory taste and can be great for a meatless appetizer. Make stuffed mushrooms with quinoa and feta, bleu cheese or some shredded Swiss cheese for a protein packed snack. Make it fun and interesting and try different fillings. Or, make a dip out of the mushrooms for some crispy baguette chips. The possibilities are endless on how to use mushrooms.

Cucumber Tomato Mint Salad

Tangy feta cheese bounces off of summer’s ripe tomatoes. Fresh mint and crunchy cucumber refresh your palate as lemon juice balances the tomatoes’ sweetness. This recipe comes to us from Nimisha of Club Dine In.

Serves 3

  • 1 cup cucumbers, peeled and cubed
  • 1 cup ripe tomatoes, cubed
  • 3/4 cup fresh mint, chopped
  • 1 tablespoon lemon juice
  • 3 tablespoons feta or goat cheese
  • salt and pepper, to taste

Toss the cubed cucumbers, tomatoes and mint together in a medium sized bowl.

Season the salad with lemon juice and salt and pepper to taste. Divide into 3 portions, crumble the cheese to top and enjoy.
