You may already be celebrating Taco Tuesday, but have you heard of Meatless Monday?  Meatless Monday is a global movement whose message is to cut the meat once a week.

Meat in our diet provides protein, B vitamins, vitamin E, and other minerals like iron, zinc, and magnesium.  So, what’s the benefit of no meat on Monday?

Reduce Your Risk and Increase Your Variety

Going meatless once a week may reduce your risk of chronic conditions like cancer, cardiovascular disease, diabetes, and obesity.   But, with beans and grains and a wide variety of fruits and vegetables, you’ll have fun experimenting with a new food at every meal.

Skipping meat on Monday doesn’t mean you’ll miss out on all the nutrients meat has to offer.  Adding beans or lentils to your meat-free meal contributes to adequate protein intake.   And, aside from providing about 16 grams of protein per cup cooked, beans and lentils are also a great source of fiber, folic acid, iron and potassium. These nutrient-rich foods are also good sources of manganese, magnesium, copper, riboflavin and vitamin B6.

Whole-grain, unprocessed carbohydrates — such as whole-wheat bread, whole-grain pasta, brown rice, oats, buckwheat, quinoa and millet — can help prevent heart disease, certain cancers and diabetes. Trying a new grain choice on your next meatless day can provide fiber for normal bowel function, along with a variety of vitamins and minerals that contribute to the nutrient density of your diet.

Stretch Your Budget

Many people find they save money by adding meatless meals to their menus each week. Meatless meals concentrate on vegetables, beans and grains—instead of meat, which can be more expensive.
