The Best Gift to Give on Father’s Day

Jewel Osco Registered Dietitians

Jun 7th, 2016

As a daughter, a wife and a mother of a son, I have always looked at Father’s Day as a way to celebrate the important role of these men in my life.  For many years, I stressed about the right gift to give to convey how much I appreciate all they contribute.  Was the perfect present the latest technology gadget, a new grilling tool, or the ever popular tie?  I’d research new DIY ideas on Pinterest, check in with my friends to see what gifts they were buying for fathers and husbands, and scour the local ads.  But then I realized, the best gift I can give them is the gift of health.

Now, in celebration of Father’s Day, I focus on planning a meal that will honor the celebratory nature of the day, but that’s also designed with health in mind.  Here are some tips on how you can do the same:

  • In June, so many great fruits and vegetables are in season, at their peak of ripeness, and available in our stores. It’s a great opportunity to take advantage of the seasonal harvest. Berries, melons and grapes combine easily in a fresh fruit salad.  Tomatoes, cucumbers, and basil tossed with a little olive or canola oil and feta cheese just feels like summer.
  • Fire up the grill but do so with lean meats. This week, all Jewel Osco stores are featuring our Dietitian’s Choice recipe for this year’s Father’s Day – Fajita Turkey Burgers.  The ingredients and the recipe can be found near the Jennie-O Extra Lean Ground Turkey Breast in the meat department.  While this turkey is extra lean, it picks up flavors of all the spices added to it.  For the juiciest burgers, avoid pressing down while grilling them.
  • Don’t shut the grill off before you start dessert. Stone fruits like plums, nectarines and peaches are also in season.  Cut in half or slices, place in a foil pouch, sprinkle with gingersnap or short bread cookies, and heat on the grill. Or try fruit kebobs, using water soaked skewers and chunks of pineapple, strawberries, and peaches. Top with vanilla Greek yogurt for a dessert that’s decadent but healthy in all the right proportions.

As Father’s Day draws to a close this year, I will know that focusing on health is the best gift I can give the men in my life because I want them here with me for years to come, celebrating Father’s Day – and all the other days in between — again and again.

Makes: 5 Servings • Prep Time: 20 Minutes • Total Time: Under 1 hour

1/2 teaspoon ground cuminFajita Turkey Burger

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon crushed red pepper flakes

1 teaspoon paprika

salt and freshly ground pepper, if desired

1 (16-ounce) package JENNIE-O® Extra Lean

Ground Turkey Breast

1/4 cup salsa, drained

3/4 cup cilantro, divided

2 onions, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

5 reduced-calorie hamburger buns, split

WHOLLY GUACAMOLE® classic or spicy dip, if desired

Salsa, if desired

1/3 cup LUCERNE® shredded Monterey Jack cheese

In small bowl, combine cumin, garlic powder, chili powder, red pepper flakes, paprika and salt and pepper, if desired.

Mix ground turkey, half of spice mixture, drained salsa, and 1/2 cup cilantro; form into 5 (1/2 inch thick) patties.

Lightly spray patties with cooking spray. Place patties in skillet over medium-high heat. Cook 17 to 19 minutes, turning occasionally. Always cook to well-done, 165°F as measured by a meat thermometer.

Meanwhile, coat large skillet with cooking spray. Cook onions, bell peppers and remaining spice mixture over medium-high heat 5 to 7 minutes, stirring occasionally. Stir in remaining 1/4 cup cilantro.

To assemble burgers, spread guacamole and salsa, if desired, on buns. Place burgers, cheese and vegetable mixture on buns.
